Meal Planning Wednesday

Untidy Josephs, Chili Cornbread Bake, Chex Crispy Treats1

Last week, a friend shared a TikTok with me where the lady called Sloppy Joes “Untidy Josephs,” and now I will probably forever call them that. She also used hot dog buns instead of hamburger buns, and I have a ridiculous amount of hot dog buns right now that the neighbor gave me. I also happened to have a can of Bold Manwich Sauce, so I put it on the menu. It was a great option for a “use what you have” dinner.

I made a huge pot of chili one night. Then the next night, I put half of the leftover chili in a small baking dish, sprinkled some shredded cheese on top, and used a cornbread mix on top. The cornbread mix I used was a brand I had never tried before that my son picked out at a discount store we frequent. I don’t know if the mix was old and stale or just bad, but thank goodness it was baked on top of chili. Mixing it with the chili made it edible. Haha.

The last photo is a quick dessert-type snack. I had recently watched a video where the lady made individual portions of Rice Krispies Treats. I had some marshmallows that were drying up, so I used those and Chex cereal instead of Rice Krispies. I threw in some mini-chocolate chips at the end as well. The mixture was still a little warm, but it was delicious and hit the spot.

  • Monday: Chuck Steak and Roasted Potatoes with onion gravy
  • Tuesday: Slow Cooker Chicken Leg Quarters with Italian dressing and potatoes
  • Wednesday: Leftovers
  • Thursday: Penne Alfredo with broccoli and Parmesan cheese
  • Friday: Pepperoni Pizza with a side salad
  • Saturday: Cheeseburger Macaroni & Cheese
  • Sunday: Tuna Patties with peas & carrots and buttered bread

My meal plan starts on Wednesday because I plan a week at a time, and the ads for my local grocery stores are published on Tuesday with the new week’s sales starting on Wednesday. Use what day works best for you.
