It’s been a while since I’ve posted. 2024 was hard for my family in so many ways. I’ll probably talk more about that at some point, but today, I want to get back to posting weekly meal plans. They help me so much not having to rush at 5:00 each night, not knowing what I’ll make, and opting for takeout instead, especially at today’s prices.
Several of this week’s recipes are from a Facebook Page I found recently, and we’ve been loving them. She posts her weekly meal plan. It uses a lot of chicken and usually ground turkey instead of beef. I would imagine because of the rising costs of beef. She even includes a list of current low-cost fruit options. Anyway, it’s called Low Dough Family. You should give her a follow/like and see what you think.
My meal plan starts on Wednesday because I plan a week at a time, and the ads for my local grocery stores come out on Tuesday with the new week’s sales starting Wednesday. Use what day works best for you.
Wednesday: Leftovers
Thursday: Mediterranean Sausage Pasta
Friday: Hawaiian Calzones (and a Sausage Pizza for the kid) with Salad featuring croutons made from my Homemade Bread.
Saturday: Davy Crockett Sandwiches with Tater Tots and Salad
Sunday: Slow Cooker Lasagna (Someday, I’ll get a recipe up for this, but honestly, it changes all the time. I use a basic oven lasagna recipe, changing it up by using whatever I have on hand that day. I then layer it in the slow cooker instead of a casserole dish. Cook in the slow cooker on low for four to six hours, depending on how done you want your pasta. Much better than the oven that heats up my already hot house. Haha.)
Monday: Slow Cooker Creamy Ranch Pork Chops
Tuesday: Smothered Chicken Burritos (I may substitute Greek Yogurt for the mayo, and I’ll use whatever shredded cheese I have on hand, probably Colby Jack.)
