Menu Plan Monday

I stuck to last week’s menu plan half the week with one exception. We ended up having chicken tacos instead of enchiladas on Wednesday. The rest of the week I wasn’t feeling well and forgot to prepare the beans. So we had leftovers Thursday and Friday. And then Saturday we had dinner at a friend’s house. Sunday I made a modified version of Honey-Brined, Southern Fried Chicken Breasts found here. Oh. My. God. It is a must try. Trust me. Andrew has been bugging me for a week to make fried chicken. I kept putting him off because it’s messy and time consuming, etc. Well I happened across that recipe a few days ago and happened to have some chicken breasts in the freezer, so thought I’d give it a try. He was a more than happy boy. And I was very pleased with the results. This is going to be a definite regular meal in our house.

See? These pictures obviously doesn’t even do it justice though. And of course the fact that they came out blurry doesn’t help. Stupid camera. {kicks camera} But trust me. Make these this week. You won’t be disappointed.

Monday: Mexican Soup
Tuesday: Beans
Wednesday: Chili
Thursday: Stew
Friday: Lasagna
Saturday: Leftovers
Sunday: Not sure yet. It is Super Bowl after all. We might end up at a party.
