Menu Plan Monday

So I haven’t really been following these menu plans to the letter the last couple of weeks. Too much going on. And too many leftovers to justify cooking another whole meal. I still haven’t made the beans. Mostly because I keep forgetting to soak them. I wish I had thought to last night though. Because the rainy and cold weather today would have made it a perfect meal. I’ll remember sooner or later. I’m almost sure of it.

I had been meaning to look for a recipe that would use up this surplus of crispy rice and oats and crunchy peanut butter the food bank keeps giving me. We don’t eat much of any of them on their own, but I figured there had to be a decent “candy bar” type recipe out there to use them up. Thankfully I saw this recipe for homemade granola bars come across my Facebook news feed the other day. I don’t normally plan or share anything other than dinner, but if you’re looking for a healthy snack for your family, this might help. I’m going to cut the sugar in half for the first batch and see what happens. Don’t tell Andrew.

Menu Plan Monday

Monday: Spaghetti

Tuesday: Leftover Spaghetti

Wednesday: Beans {If I remember to soak them Tuesday night. LOL)

Thursday: Easy Creamy Spicy Beef Enchiladas via this recipe although I’ll likely leave out the jalapenos. Andrew likes it pretty spicy, but that’s probably pushing it.

Friday: To be determined

Saturday: To be determined

Sunday: To be determined
