This week’s (and most of the month, actually) brought to you by mostly ChatGPT! About once a month, I take an inventory of everything in my freezer and pantry as well as anything in the refrigerator that needs to be used up. I did that on Sunday, and then I put it all in ChatGPT and asked it to create a meal plan for the month using mostly what I had with minimal extra purchases needed. You’ll notice we will be eating a lot of chicken this week. Chicken is cheap and we have quite a bit of it at this time.
It asked me a few clarifying questions, such as how many people I’m cooking for and if I wanted to plan meals around weekly themes. I told it I only needed it for two adults. My 8-year-old only eats certain things, and I didn’t need that to be taken into consideration. I’ve got him covered. Haha.
ChatGPT did a great job! I’m very pleased with the results and only made a few adjustments. To be noted, I forgot to tell ChatGPT that there was a holiday this week. So, Friday will probably change depending on what we decide to do for Independence Day. (How is it July already?!)

My meal plan starts on Wednesday because I plan a week at a time, and the ads for my local grocery stores are published on Tuesday with the new week’s sales starting on Wednesday. Use what day works best for you.
Monday: Chili with pinto beans & cornbread muffins
Tuesday: Ahi Tuna Steaks with Balsamic Glazed Sauteed Cabbage and rice
Wednesday: Leftovers
Thursday: Chicken, Rice, & Cheese Bake with Roasted Broccoli
Friday: Ranch Chicken Drumsticks with Macaroni & Cheese, and Green Beans.
Saturday: Ramen Stir-fry with Rotisserie Chicken & Stir Fry Veggies
Sunday: “Fried” Chicken Legs with Homemade Baked Beans & mini cornbread muffins
Dessert: Banana Bread (or muffins)
