Menu Plan Monday

Because of recent events, I haven’t posted a menu plan for a while. I’m trying, once again, to get back into the routine. Last time I posted a menu plan I had planned corned beef. I actually made that in the crock-pot the day my sister died. Obviously we didn’t end up eating it that day since we hit the road for Georgia instead. However, I did put it in a bowl and stick it in the freezer before we left. So last week, I thawed it out and heated it up. We had it with potatoes and carrots stew style the first day. Then two days later, I took some of the leftover meat and made into tacos with grilled onions. Both were delicious.

Monday: Crock-pot Pork Ribs with Garlic Mashed Potatoes and Gravy

Tuesday: Chicken with Stuffing

Wednesday: Steak with Spanish Rice

Thursday: Beans

Friday: Rice and Gravy

Saturday: Leftovers

Sunday: To be determined
