Menu Plan Monday

I just realized I never posted a menu plan last week. I blame my infected thumb. Between that and deadlines, I totally forgot. I don’t even remember eating, but I’m sure we did. Andrew would have let me know if we hadn’t. I’m almost sure of it. My stomach probably would have too. It tends to get cranky when I forget. I’m sure whatever we ended up eating it was more quick and easy than healthy. Again, blame the thumb. Not me.

I also just remembered that I didn’t follow the previous weeks menu plan that well either. We had the ribs on Monday. I made Chicken with Dumplings on Tuesday instead of stuffing. I think Wednesday was leftovers from Tuesday. And I don’t remember the rest. I remember I kept forgetting to soak the beans and that’s why we never had that. I should do that this week. And for Easter Sunday, despite the stupid infected thumb, I cooked a fairly nice dinner. Since it’s just the two of us, I don’t usually buy a big ham since it would go bad before we eat it all, and I don’t have much room for freezing. Instead I usually purchase a ham steak, or two depending on size. This year I also made candied baby carrots in the crockpot. I also made instant mashed potatoes in the small crock-pot. I know you’re thinking I’m crazy to even have attempted instant potatoes, but I’m telling you Andrew and I agreed they came out fantastic.

Menu Plan Monday

Monday: Roast with Carrots, Onions and Gravy. (Andrew gets very sad if I forget or bypass the gravy.)

Tuesday: Rice and Gravy

Wednesday: Beans

Thursday: Chili

Friday: Leftovers

Saturday: Pizza

Sunday: TBA – Usually something in the crock-pot so I don’t have to cook after church. Often we eat out after church. Usually Garcia’s because kids eat free on Sunday.
