I’m not doing so well with this menu planning am I? LOL I really, really, REALLY want to though because I know it helps. Every time I take the time to do it, I end up being so much less stressed all week at dinner time. Even if I stray from it on occasion, it totally helps. I don’t stray too much, but there a few times that I will.
- Get invited to somebody else’s for dinner
- Go to the store for something and find a good deal on meat and decide to substitute it
- Suddenly have a craving for something specific
- Too tired or in too much pain to deal with dinner
That last one is usually the main reason we end up getting fast food, but I’m hoping to start doing some freezer cooking here soon which should help that. I do keep a few things on hand that usually will keep us from having to go that route, but I’m not sure how much of a better option it is. LOL Things like frozen pizza, ramen noodles, TV dinners, etc. But at least I’m saving the cost of gas to get the fast food, plus it might not be a whole lot healthier, but it’s usually cheaper. Ahhh, oh well.

Monday: Spaghetti and french style green beans
Tuesday: Chicken breasts with broccoli
Wednesday: Pork Ribs with stuffing & broccoli
Thursday: Stuffed Peppers
Friday: Tuna casserole with peas & carrots
I’ve decided I’m only going to plan five days a week throughout most of the summer. Sometimes Andrew isn’t here because he ends up staying with his grandma or aunt, so I’ll just shuffle things around accordingly. When he’s not home I don’t always fix a dinner. I usually just have a sandwich or snack off and on or something.

Shannon, that plan isn’t lame at all. Your menu plan is screaming for freezer cooking.
Just double or triple that spaghetti sauce and double up the stuffed peppers when you make them. You can freeze them for next time you don’t feel good. Spaghetti sauce thaws really quickly.
If you are marinading the chicken breasts then put some in a freezer bag with the marinade and freeze those also. Easy 3-4 meals for the freezer and no extra work :)

Thanks, Val! I’m trying to remember to purchase stuff to store the freezer cooking stuff, but there never seems to be enough money. I’m working on it though!

What kind of stuff are you trying to save up for exactly? Freezer bags work wonders ;) Or hit garage sales or thrift stores for extra baking dishes and cover them with plastic wrap and aluminum foil. You can probably find them even cheaper than the aluminum pans at the grocery store!

Ha ha. I’m not sure. Tupperware type stuff mostly. I’ve used foil and Ziploc some. Right now I can barely afford that though. I’m getting caught up though. I’m going to get there!
